Last month we announced the news that Demuths Cookery School is coming to an end and that Helen is setting up a new venture in sunny France.

We are delighted to introduce ‘Melusine’ and share with you all more details about Helen’s new cookery school.

Melusine will inspire creative and nourishing ways of working with food, in stunning surroundings, making the most of fantastic, fresh, locally sourced produce.

For those of you that know Helen from Demuths, you can expect more delicious food, the same great standard of teaching delivered with the patience and passion that she is so well known for.

First up - a foodie holiday

Helen will be kicking Melusine off to a delicious start in September with a luxury food-filled holiday.

Sunday 17th - Saturday 23rd September

Over the course of week, Helen will take guests to visit local markets and meet with local suppliers. There will be lots of fantastic food and wine tasting as well as daily hands-on cooking sessions.

There will also be time to relax, enjoy the swimming pool, explore the local area, take a bike ride along the canal and head to the beach.

Melusine Vegan Diploma

From the creator of the renowned Demuths Vegan Diploma comes the Melusine Vegan Diploma.

A specially designed programme to help established chefs, aspiring plant-based chefs and keen non-professional cooks alike. It is a fully comprehensive course covering all aspect of modern vegan cooking.

It is taught over a total of 6 weeks. The full programme will run twice a year giving you the option to take all 6 weeks consecutively or jump in where you left off. Depending on your experience you do not necessarily need to complete previous levels to attend and can just attend the course that is right for you.

For anyone who previously completed part of the Demuths Vegan Diploma, the course has been designed to follow on as before so you can join Helen to continue your learning.

Melusine Retreats

Helen has always been interested in how what we eat is so closely related to our wellbeing. Moving into a purpose built space in beautiful surrounds has provided the perfect opportunity to combine her passion for food and wellness.The 2024 programme of retreats is soon to be announced but expect delicious cooking, with a focus on nutrition and gut health, alongside activities such as meditation, massage, Qi Gong and yoga.


Melusine is based in the small hamlet of Le Somail, Saint-Nazaire-d'Aude situated between Narbonne and Carcassonne, in the Occitanie region of southern France on the famous and picturesque Canal du Midi.

There is an open plan kitchen space for our cookery sessions and a courtyard and sun terrace where we can gather to share the food we have prepared.

Melusine has onsite accommodation available.
