Course Details

With an emphasis on whole foods and nutrition, this course is for those who want learn plant-based cooking that is also free from gluten and refined sugar. This is an additional module of our Vegan Diploma programme but it can also be taken as a stand alone course.

If you are looking for new and inspiring way to get more vegetables in to your diet, this 3-day vegan cookery course will teach you everything you need to know for a healthy plant-based, feel-good diet, using the best ingredients.

This course is all about how to create nourishing dishes that will fill you with energy. Not just for vegetarians and vegans- this course is for anyone who wants to learn how to create healthy delicious meals that will set you up for feeling your best.

We will show you how to use sugar alternatives, using whole fruits, coconut sugars, maple syrup, agave and fruit sweeteners.

You will learn how to make delicious meals that combine ingredients to keep your blood sugars level and stop cravings and what are the healthy fats and the best cooking methods with each fat.

Learn how to look after your digestion, showing you healthy fermentation, with sauerkraut, tempeh, kefir and fermented nut based cheese.

We will take our inspiration from around the world and show you how to use ingredients like tofu, miso, pulses, grains and plenty of herbs and spices.

We will cook with the best ingredients for all your essential vitamins and minerals and show you tasty ways to bring more raw foods into your diet.

We will create dishes such as:

  • Japanese Miso Soup with Ginger and Buckwheat Noodles
  • Brown Rice Sushi
  • Spiralized Vegetables with a Wild Herb Salsa Verde and Capers
  • Fermented Buckwheat and Seeded Bread
  • Rice Wraps with Sour Fruits, Vegetable Herb Salad and Mungbean Noodles
  • Tempeh Gado Gado Salad with Peanut Sauce
  • Fermented Cashew Cheese with de-hydrated crackers
  • Mungbean Pancakes with Kimchi and Pickled Vegetables

Each day will be a mixture of demonstration and lots of hands on cookery.

The aim of this course is to give you ideas and inspiration for making healthy meals that are full of flavour without feeling like you are missing out on anything.
